Happiness Salad. (There’s an oxymoron right there). I decided I had to create a salad. Salads mean goodness. Salads mean piousness. Salads are eaten by people who want to live for many years, so they can do lots of things.
Salads also mean boring. So I turbocharged mine. There are so many items in this Happiness Salad, it needs its own library to store the ingredients list.
To create the Happiness Salad you will need:
- A living lettuce
- 6 tomatoes
- 4 spring onions
- 1 mango
- 1 pomegranate
- 1 red chilli
- 1 lime
- a handful of cashews
- 1 roasted chicken breast
- 1 fillet steak, fried rare
- big dash sweet chilli sauce
- salt and pepper
Living lettuce? What the hell? Well its one of those things you buy in a supermarket that is growing in a pot – it’s still alive. Waste of money? No! It’s still alive as I write this, 2 weeks after I acquired it. For £1. There’s some value.
About the most technical aspect of this salad is getting the pomegranate seeds out, a trick I learned some time ago at Stefan’s Gourmet. First you slice around the skin.
Then twist to separate the two halves.
Notice the crapness of my pomegranate. So much pith and so few seeds (compare to the fruit in the Youtube video in the link above). That’s the problem buying things from a supermarket. Crap.
Anyway, hold the fruit over a bowl of water and whack it with a wooden spoon to release the seeds. The water helps to separate out the seeds from the pith.
Now prepare all the other ingredients. Slice and dice. Chop and peel.
Really now this is all about presentation. Get a big serving dish, cut some lettuce and arrange on the plate.
Layer on the sliced tomatoes.
Next the sliced spring onions.
Too much salad. Lets stick the chopped up chicken on.
Now some more health: mango (mangled in this case, rather than finely chopped up) and the pomegranate seeds.
Next the cashews, for some additional protein and extra crunch.
And finally the steak, sliced, lime wedges and some chilli sauce.
