Coconut Spinach and Lemony Chickpeas

This was an interesting creation I happened upon on an American blog called ‘the kitchn‘. Edgy title. Edgy? Well, see how they miss out the ‘e’ from ‘kitchen’. That’s edgy. It says ‘we do food, but we don’t follow the rules’. Anyway enough banter, they do some very nice dishes and are now a useful source of inspiration. And this one was dead easy, served with a baked sweet potato, which is a culinary sensation in itself.

To recreate this recreation of a creation you will need:

  • Splash of oil
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • thumb-sized piece of ginger, chopped
  • 6 pieces of sun-dried tomatoes, chopped
  • zest and juice of 1 lemon
  • 1 red chilli, chopped
  • 1 can chickpeas, drained and rinsed
  • 2 bags of ready to eat spinach
  • 1 can coconut milk
  • salt and pepper

Now some of you might have noticed that this is one of those ‘step-by-step’ food blogs. You know, each critical stage of the food-creation process is marked with a photo of the critical steps. Pouring shots, chopping shots, whizzing shots, etc.

This dish doesn’t really need any of that. You just stick it all in a pan and cook. However given that, a) I want to see how quickly I can use up my storage allocation on WordPress before I have to upgrade my account (again) and b), well there isn’t really a ‘b’, here goes a step-by-step guide to putting Coconut Spinach and Lemony Chickpeas together:

First prepare the ginger, chilli and garlic thus:

Then fry in the oil on a low heat, together with the onion, adding the chickpeas, tomatoes and lemon juice and zest after a couple of mins…

Cook for a few mins to warm through the chickpeas. Now add the spinach (one bag at a time). I love spinach. It has massiveness when it’s raw and then simply disappears once its cooked…

Cooking time – 0 seconds…

Cooking time – 2 mins…

Once the spinach has wilted down add the coconut milk, stir and simmer for a couple of mins…

Cook until it goes a lovely light brown…

Serve over a delicious baked sweet potato…

You can always augment your photos to deepen the colours somewhat using iPhoto. I’m not saying I did of course, just saying you could…
