Mushroom Pastries From The Hairy Bikers

I’m about half way through present wrapping and it’s doing my head in (As is the fact that I am waiting for some new blinds to turn up from John Lewis – they are now officially my most hated brand because they didn’t deliver on time and they don’t seem to know what they are doing; for those who know the John Lewis brand this might come as a surprise – for those that don’t; they’re overpriced and, thankfully for you, over here).

So to try and remain in a state of festive calm I reminded myself that the Hairy Bikers seem to be able to maintain an air of constant joviality no matter what. And so I delved between the covers of their book of pies and found this creation:

These creamy cheesy garlicy mushroom pies are very easy to make:

  • 4 portobello mushrooms
  • a pack of Boursin cheese with garlic and herbs
  • egg to glaze the pastry
  • a pack of rolled puff pastry

Fry the mushrooms in a little oil on both sides for a few mins, making sure to drain off the liquid:

Heat the oven to 220 centigrade. Unroll the pastry on a floured board and cut out 4 squares, making sure they are bigger than the mushrooms:

Slice the Boursin into 4 equal slices and place on top of the pastry; top with a mushroom:

Grind on some salt and pepper and then gather in the edges of the pastry to form lovely pastry cups:

Now brush the pastry with egg and bake for about 15 mins. Now I thought these looked okay but decided I’d spruce one up with a cheese, mustard and tomato topping:

The Hairy Bikers are good at what they do – although they aren’t as fat as this anymore; they’ve been on  a diet because they literally ate all the pies:

  1. Those look yummy and ridiculously easy!

    And yes, I am actually surprised that you have delivery problems from John Lewis.

    Have never heard of the Hairy Bikers. Are they the sons of the Two Fat Ladies? I loved those ladies.

  2. So we can blame the poor ‘Hairy Bikers’ for this one also? How does one admit one fell from ‘hate’ into ‘love’? How can one not use the fun and logical, but kind’of ‘fall in love’ with two of the unlikeliest ‘teachers’ in the world 😀 ! I did!! They DO make me grin and then listen!!!!

  3. Thank you – I think you’ve just helped w/at least one thing I’m making for Christmas Eve. These look better than great. I guess you’d recommend serving white wine with them?
    Never heard of John Lewis but I’ve yet to find any blinds that are reasonably priced. If they don’t come maybe just tape the Sunday newspaper up – that’s always a nice decorating statement.
    Good for you with doing your own wrapping – I’m very impressed.
