Quesadilla or Sincronizada?

Know the difference? Mexicans do. Its like calling a Burger in a bun a sandwich. Oh, hang on a minute Americans do that..Well its like calling potato crisps, chips…okay I give up.

Anyway whatever you want to call this creation, it’s dead easy and perfect munchie food (so it’s kind of ideal if you just rolled in from the pub and forgot to stop at the Kebab Shop).

For delicious (vegetarian) QuesadillaSincronizada you will need:

  • Flour tortillas
  • Red Bell (Capsicum) Pepper
  • Mushrooms
  • Chilli Flakes
  • Lots of Cheese
  • Onion
  • Dash of Worcestershire Sauce

For the refried beans

  • Red Kidney Beans
  • Garlic
  • Onion
  • Salsa, to serve

Method

First coat the pepper, onion, mushroom and chilli in oil and then fry on a griddle, add some worcestershire sauce.

Now fry up some more onion and some garlic and add the drained kidney beans.

Once softened, whizz the beans to create your bean paste:

Now you can put the creation together.

First grab a tortilla and smear the beans on top:

Now layer the vegetables and loads of cheese on top:

Now press another tortilla on top of the pile and fry in a big flat skillet, turning every now and the. Finally dump another load of cheese on top of that and place under a grill until it melts:

Now serve this bad boy up with salsa. Perfect post-pub food!

Oh, P.S. If you serve it round and cut into slices its a Sincronizada. If its one tortilla wrapped over to form a half-circle its a Quesadilla. At least I think thats it.
