This was going to be the beginning of a new, leaner, healthier New Year. Less of the bad things (fat, salt, alcohol) and more wholesomeness (fibre, water and vitamins). Then I found some honey in the cupboard and one thing led to another.
Salt and Sugar – bad but not mad.
To create this kind of aromatic but not overpowering taste sensation (and it is a taste sensation) you will need:
- Salmon fillets (skinless and boneless – i mean who wants bits of silvery scales everywhere)
- A chunk of ginger
- Soy sauce
- White wine
For the egg-fried rice you’ll need:
- Basmati rice
- Soy sauce
- Olive oil
Finely chop the ginger and garlic with Jamie’s trusty choppy thing:
Then marinate the salmon in a mix of soy sauce, honey, chopped garlic and ginger, wine:
Meanwhile cook some rice and leave to cool (dont covercook). Put the marinating salmon (still in the marinade in its dish) in the oven.
Back to the rice: chop up some onion finely and fry in oil. Add the rice and peas and some soy sauce and stir fry. Move the rice to one side and then pour in two beaten eggs
Cook the egg for a few seconds and then stir into the rice.
Serve with a couple of lime wedges and a big glass of white wine (please note wine glass – a present from the grandmother-in-law)
