Cooking and drinking at the same time is one of life’s premium pleasures. However there are relatively few dishes that can be prepared when combining these two activities (for obvious reasons). Here is one of them:
You will need:
Olive oil and butter
2 bottles of white wine
Open one of the bottles of wine and pour yourself a glass.
Melt some butter in olive oil and add finely chopped garlic cook for a minute and then add the onions and cook until see-through. Drink some wine. Then add about half to two thirds of a pack of rice and stir around until the grains go translucent. This is a good time to reflect on the highlights of the day while sipping your wine.
Then add, a ladleful at a time, the stock (heated up first), stirring the rice slowly and constantly. Normally another glass of wine will be needed by now. Add additional ladles as the stock is absorbed and then start adding the contents of the second bottle of wine. Once the liquid is absorbed add the scallops and prawns and cook until the prawns are pink. Add the dill and a good handful of parmesan cheese.
The whole thing takes about half an hour and by then you are well away and ready to eat
You can also add peas, mushrooms, peppers and so on
