I had some duck left over from the other day. And I love hoisin sauce. So it made perfect sense to put the two together. Again. Like a kind of redux (sic). Think Apocalypse Now for those who know their movies.
Ingredients
- Duck!
- Chilli
- Spring Onion
- Garlic
- Ginger
- Red Pepper
- Shallots
- Hoisin Sauce
You’ll also need some ingredients for special fried rice (rice – obviously, peas, onions, soy sauce, egg – that should do it).
Method
Chop up the ginger, garlic, pepper, chilli and shallots with Jamie’s amazing choppy thing
Where is the varnish on that board going?
Now fry it up and then add the duck and the spring onion and stir fry that flavoursome loveliness!
Meanwhile prepare your rice. For perfect rice you need a) basmati rice and b) you need to cook it the ‘long’ way. That means 1 part rice to 2 parts water and then you need to simmer for 12 mins…. actually read the instructions on the packet. Anyway once its cold and ready you stir fry it in onions and peas and then stir in some beaten egg…
Now add the hoisin sauce to the duck (quack).
Now you’re ready to serve this sucker up. With a bit of coriander and some lime wedges (purely for effect).
