Its worth remembering that I’m married to a vegetarian (who might eat the odd prawn every now and then). Her favourite culinary creation is soup, primarily because we otherwise would live off a diet of chocolate puddings and pies.
Her carrot and potato soup is extremely good. I am no good at soup because I cannot stop adding things to it while I’m making it. For perfect carrot and potato soup you will need:
- One large potato, peeled
- Four or five carrots, peeled
- One large onion, finely chopped
- Butter
- Vegetable stock
Fry the onion in butter then add the veg and continue to cook. Add the stock, season and boil until soft.
Now transfer to a jug and whizz until you get a nice thick puree soup!
Avoid dropping the wedding ring into the creation
Now serve. If you are sensible you will eat this with just a grind of pepper. If you are me you will have to include bread and cheese.

I like the idea of adding potato to carrot soup. The bread and cheese would go well to make it a more substantial meal.

How easy and yummy is this! I love making soups for this exact reason – so easy to make and yet so delicious that it seems like you must have spent ages making it.
I’d definitely be adding the bread but possibly not the cheese, only because I would have eaten all that cheese on the way to the table …
Yes cheese can be a problem. I try to get it in the soup before i eat it but that can be diffcult…
